Summer Street Tacos with Lime Slaw

Fast summer tacos with seasoned filling, lime slaw, avocado, tomatoes, and cotija or feta.

Ingredients

  • 1 lb chicken, steak, or black beans
  • 8 small tortillas
  • 3 cups shredded cabbage
  • 1 lime, zested and juiced
  • 1/3 cup sour cream or Greek yogurt
  • 1 cup pico de gallo or chopped tomatoes
  • 1 avocado, sliced
  • 1/2 cup crumbled cotija or feta

Instructions

  1. Season the protein or beans with salt, pepper, cumin, and chili powder.
  2. Cook in a hot skillet until browned and cooked through.
  3. Toss cabbage with lime juice, lime zest, sour cream or yogurt, and a pinch of salt.
  4. Warm tortillas, then fill with the cooked filling, lime slaw, pico, avocado, and cheese.
