Pesto Peach Chicken with Broccolini & Orzo

Ingredients

  • 1 1/2 lb thin chicken cutlets, plus 1 tsp each salt and pepper
  • 12 oz broccolini, 2 tbsp olive oil, and 2 tbsp butter
  • 2 ripe peaches, cut into wedges
  • 1/3 cup basil pesto and juice of 1/2 lemon
  • 1 cup dry orzo and 2 cups chicken broth
  • 8 oz burrata, 2 garlic cloves, and 1/4 cup basil

Instructions

  1. Roast oiled broccolini at 425 degrees F for 14 to 16 minutes until tender and blistered.
  2. Simmer orzo in broth 9 to 11 minutes until tender; stir in half the pesto.
  3. Season chicken. Sear over medium-high 4 to 5 minutes per side to 165 degrees F.
  4. Lower heat; add butter, garlic, and peaches. Cook 3 minutes until peaches soften.
  5. Return chicken to the pan; spoon lemon pan butter and remaining pesto over it.
  6. Serve chicken, peaches, and broccolini over orzo; finish with burrata and basil.
