Lemon Pepper Salmon with Couscous and Asparagus

Ingredients

  • 4 salmon fillets
  • 1 cup couscous
  • 1 bunch asparagus, trimmed
  • 1 lemon, zested and juiced
  • 2 tbsp olive oil
  • 1 tsp lemon pepper seasoning
  • 2 tbsp chopped parsley
  • 1/4 cup crumbled feta, optional

Instructions

  1. Season salmon with olive oil, lemon pepper, and salt.
  2. Roast salmon and asparagus at 425 degrees F until salmon flakes easily.
  3. Pour boiling salted water over couscous, cover, and fluff after 5 minutes.
  4. Toss couscous with lemon juice, herbs, feta, asparagus, and salmon.
