Lemon Herb Chicken with Orzo and Green Beans

A fresh weeknight chicken dinner with lemony orzo and crisp green beans.

Ingredients

  • 1.5 lb chicken thighs or breasts
  • 1 cup orzo
  • 12 oz green beans, trimmed
  • 1 lemon, zested and juiced
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 2 tbsp chopped parsley or basil
  • 1/3 cup grated parmesan

Instructions

  1. Season chicken with olive oil, garlic, lemon zest, salt, and pepper.
  2. Sear or grill chicken until cooked through, then rest and slice.
  3. Cook orzo in salted water. Add green beans during the last 3 minutes.
  4. Drain, then toss orzo and green beans with lemon juice, herbs, parmesan, and sliced chicken.
