Lemon Herb Chicken with Orzo and Green Beans
A fresh weeknight chicken dinner with lemony orzo and crisp green beans.
Ingredients
- 1.5 lb chicken thighs or breasts
- 1 cup orzo
- 12 oz green beans, trimmed
- 1 lemon, zested and juiced
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 2 tbsp chopped parsley or basil
- 1/3 cup grated parmesan
Instructions
- Season chicken with olive oil, garlic, lemon zest, salt, and pepper.
- Sear or grill chicken until cooked through, then rest and slice.
- Cook orzo in salted water. Add green beans during the last 3 minutes.
- Drain, then toss orzo and green beans with lemon juice, herbs, parmesan, and sliced chicken.
