Honey Mustard Sheet Pan Chicken

A low-cleanup chicken dinner with honey mustard glaze and roasted vegetables.

Ingredients

  • 1.5 lb chicken thighs or breasts
  • 1 lb baby potatoes, halved
  • 3 cups broccoli or green beans
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder

Instructions

  1. Heat oven to 425 degrees F. Toss potatoes with oil, salt, and pepper.
  2. Whisk mustard, honey, vinegar, garlic powder, salt, and pepper.
  3. Brush chicken with sauce and place on the sheet pan with potatoes.
  4. Roast 25 minutes, add vegetables, brush with remaining sauce, and roast until chicken is cooked through.
