Garlic Butter Shrimp Tacos

A fast taco-night card with garlicky shrimp, crunchy lime slaw, avocado, and a quick creamy finish.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 8 small flour or corn tortillas
  • 3 tbsp butter
  • 2 garlic cloves, minced
  • 1 tsp chili powder
  • 1 lime, zested and juiced
  • 2 cups shredded cabbage or slaw mix
  • 1/2 cup cilantro, chopped
  • 1 avocado, sliced
  • 1/3 cup sour cream or Greek yogurt

Instructions

  1. Pat shrimp dry, then season with chili powder, salt, and pepper.
  2. Toss cabbage with lime juice, cilantro, and a pinch of salt.
  3. Stir sour cream or yogurt with lime zest and a squeeze of lime juice.
  4. Melt butter in a skillet, cook garlic for 30 seconds, then add shrimp.
  5. Cook shrimp 1 to 2 minutes per side, until pink and just cooked through.
  6. Warm tortillas, then fill with lime slaw, shrimp, avocado, and sauce.
