Garlic Butter Shrimp Tacos
A fast taco-night card with garlicky shrimp, crunchy lime slaw, avocado, and a quick creamy finish.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 8 small flour or corn tortillas
- 3 tbsp butter
- 2 garlic cloves, minced
- 1 tsp chili powder
- 1 lime, zested and juiced
- 2 cups shredded cabbage or slaw mix
- 1/2 cup cilantro, chopped
- 1 avocado, sliced
- 1/3 cup sour cream or Greek yogurt
Instructions
- Pat shrimp dry, then season with chili powder, salt, and pepper.
- Toss cabbage with lime juice, cilantro, and a pinch of salt.
- Stir sour cream or yogurt with lime zest and a squeeze of lime juice.
- Melt butter in a skillet, cook garlic for 30 seconds, then add shrimp.
- Cook shrimp 1 to 2 minutes per side, until pink and just cooked through.
- Warm tortillas, then fill with lime slaw, shrimp, avocado, and sauce.
